Just like La Madeleine used to make (and still does)

This weekend, my sister Jillian came to visit and we had a family BBQ down at the pool. Well, with all this healthy eating and the vitamin regimen I have been on, we didn't really want to just throw some oily chips in a bowl and call it a side. So, being the little DIYers that we are, we decided to recreate the La Madeleine Pesto Pasta Salad. Oh boy, was it heavenly. 




La Madeleine's Bowtie Pasta Salad (Copy-Cat Recipe)
Ingredients:
16oz package dry bowtie pasta
8 Tbsp pesto (I actually only used 4 because the jar I bought was small)
1/2 C sundried tomatoes, chopped
1/2 C Roma tomatoes, chopped
4 Tbsp Parmesan Cheese, grated
1/2 C spinach, diced
1/2 C green onions, diced
4 Tbsp Ceasar dressing (I probably used about 6 to compensate for less pesto)

Directions:
Boil noodles until a little over Al Dente. Drain, rinse, set aside and let cool slightly. 
Add all other ingredients, mix well. Serve chilled.
