Just like La Madeleine used to make (and still does)

This weekend, my sister Jillian came to visit and we had a family BBQ down at the pool. Well, with all this healthy eating and the vitamin regimen I have been on, we didn't really want to just throw some oily chips in a bowl and call it a side. So, being the little DIYers that we are, we decided to recreate the La Madeleine Pesto Pasta Salad. Oh boy, was it heavenly. 




La Madeleine's Bowtie Pasta Salad (Copy-Cat Recipe)
Ingredients:
16oz package dry bowtie pasta
8 Tbsp pesto (I actually only used 4 because the jar I bought was small)
1/2 C sundried tomatoes, chopped
1/2 C Roma tomatoes, chopped
4 Tbsp Parmesan Cheese, grated
1/2 C spinach, diced
1/2 C green onions, diced
4 Tbsp Ceasar dressing (I probably used about 6 to compensate for less pesto)

Directions:
Boil noodles until a little over Al Dente. Drain, rinse, set aside and let cool slightly. 
Add all other ingredients, mix well. Serve chilled.

  4. You should change the title because ALAS! They no longer serve this and instead have a gross rigatoni pasta which is way too big to be in a pasta salad imho but who am I ?! Tysm for the recipe because my visit yesterday after not going for 5+ years will be my last. My tomato basil is better and my pasta salad will be too thanks to you. Overpriced, tiny portions that were so gross.

    1. It's still the tomato basil pesto pasta but they changed the bowtie pasta to penne pasta 4-5 years ago. The flavor is still there but the noodles are definitely too hearty to be a light pasta salad side dish like it used to be.
